During the week we don't have much time for our breakfast. We keep it quite simple (and fast), without imagination.

But weekends are completely different. <br />
<br />
I am usually a one who get up first, and not long after my son is with me in the kitchen and we start our breakfast preparations, and last weekends we made scones..
<br />
When rest of my family get up, house already smell on freshly baked scones.<br />
<br />
We take our time eating good food, planing our weekend and speaking about week behind us.<br />
I wish we could have breakfasts like that every day.

(adopted from Jamie Oliver 'Ministry of Food')<br />
<br />
450g spelt flour, plus extra for dusting
<br />
2ts baking powder
<br />
120g soy margarine
<br />
salt <br />
2 large eggs
<br />
5tbs rice milk, plus extra for brushing
<br />
<br />
Preheat the oven to 200C. Pulse the flour, baking powder and butter in a food processor just until the mixture starts to look like breadcrumbs. Transfer to a mixing bowl and make a well in the middle. <br />
In another bowl, beat the eggs and milk with a fork. <br />
Pour your beaten eggs and milk into the well in the flour mixture and stir well,adding a splash more milk if necessary until you have a soft dough.

Dust a clean work surface and rolling pin with flour. Roll out the dough until it's 2cm thick. Using 7cm round cutter cut out circles and place them on a non stick baking sheet. Dip a pastry brush into some milk and brush the top of each scone. Bake for 10-15 min, until risen and brow.

A year passed so quickly and it was a time for a new visit to <a href="http://quintadoarneiro.wordpress.com/">Quinta do Arneiro</a>.<br />
Lisbon was in fog that morning,but when we arrived at the farm, sun was fully shining .<br />

I was making bread this morning,it takes place of my daily routine, and I though about reasons I love to do that.
It is such a satisfying and stress relieve process..feeling the dough between your fingers, kneading it over and over, seeing it grow, smell of fresh bread and taste of hot bread with butter...

If you never baked your bread (and doing it in a bread machines doesn't count) this is a great recipe for starters. It is really simple, you just can't fail with it, and it is really tasty.

<strong><span style="font-size: large;">Simple Spelt Bread</span></strong>

250ml water
<br />
7g dried yeast
<br />
2ts sea salt
<br />
400g spelt flour (and some extra for sprinkling)
<br />
1tbs sugar
<br />

Put water in a large mixing bowl with the yeast and whisk until it has dissolved.
Add salt, flour and sugar and mix into a soft dough. Knead well on a floured surface for a couple of minutes.
You should have a firm dough. Sprinkle with flour, covert with a clean tea towel and leave to prove in a warm place for 1 hour, or until the dough has doubled in size.

Punch down the dough, sprinkle with flour and place on the prepared baking tray.Cower with the tea towel again and leave to prove in a warm place for 1 hour, or until the bread has doubled in size.

Preheat the oven to 240C.
Dip a sharp knife in a cold water and make 1 diagonal cut on top of bread. Bake in the preheated oven for 20-25 min, or until golden brown.

Do you have a same feeling as I do? I feel like November passed in a blink of my eye, and we are already in December thinking about Christmas.

November is my favourite months, not just because it is a month of <a href="http://sandapagaimo.blogspot.pt/2012/11/dinner-to-remember.html">my birthday</a> but also because I think it is a time where natural changes are most obvious. <br />
Colours change completely , days are shorter , sky has amazing colour..I love November !!

If you ask me about typical Bosnian dishes, my list would definitely include read bean soup. </div>

2l water
<br />
3 cups soaked red beans
<br />
1 onion, finally chopped
<br />
4 cloves garlic
<br />
1/2 chorizo, cut into small peaces
<br />
1tbs salt
<br />
1/2 tbs red paprika
<br />
1tbs olive oil
<br />
2 carrots, cut into cubes
<br />
2tbs spelt flour (or what flour)
<br />
2 handful of green leaves (spinach, rocket, chard, mizuna)
<br />
<br />
Put water, beans, onion, garlic, chorizo, salt, paprika and olive oil in the big pan and cook on a medium-high heat for around 1 hour or until you see that beans are tender and cooked. <br />
Take garlic cloves out.
<br />
Take some liquid from the soup and mix with flour, stir into the soup. Add green leaves and cook for more 10 minutes.

<br />
Tips: If you see , during the cooking, that there is not enough liquid in the soup feel free to add some water.</div>

<a href="http://www.saradaviladesign.com/">Sara</a> came with the spring. <br />
She sent me a really cute mail introducing herself and her work and I just couldn't resist and had to meet her in person. We met, drank lemonade, spoke a bit and I knew this was a beginning of good and long lasting relation.<br />

I had some small projects I wanted to do with her and I am so happy I did. She was really professional and I loved her style.

Just one more month is missing!!<br />
There is such an excitement in our house, kids don't speak about nothing else but Christmas. They already did advent calendar, letter for Santa is almost ready (even they wake up every morning and remember to add 'just one more thing' to the list {*smile}) and I am thinking abut our dinner menu...<br />

I know what are you going to say.. there is still a month to go, but since I want to make presents or buy some handmade once..there is a lot of preparations left.<br />
I just want to enjoy every single Christmas detail without any rush!!!<br />

<span style="font-size: large;"><b>Lemon and Ginger Cake </b></span><br />
(adopted from Sweet Paul Magazine)<br />
<br />
225g softened butter<br />
250g sugar<br />
4 large eggs<br />
zest and juice of 3 lemons<br />
360g flour<br />
3/4 ts baking powder<br />
1/2 ts salt<br />
2ts ground ginger<br />
100g sour cream<br />
50g candied ginger<br />
1tbs iced sugar<br />
<br />
Preheat the oven to 175C.
In the bowl of a standing mixer cream sugar and butter until pale. Add eggs, one at a time, Mix in lemon zest. Add sour cream.
In a separate bowl whisk together flour, salt, baking powder, ground and candied ginger. Add dry ingredients to butter mixture.
Pour batter into the greased pan and bake for 50-60 minutes or until the toothpick inserted into the center comes out clean.
In the meantime make juice of 3 lemons and mix with icing sugar,heat. When you take a cake from the oven , immediately put hot lemon juice over and leave to cool.<br />

As you probably know, last week I made 40.. and that my friend is a great reason to celebrate.
<br />
I wanted to have a dinner with people that make part of my daily life, once that are there when needed, with whom I can share good and bed news.
<br />
Since the beginning I knew I wanted to make it at <a href="http://www.facebook.com/#!/chefninolxfactory?fref=ts">Chef Nino</a>, cosy and beautiful place that has a special place in my hart. <a href="http://www.facebook.com/#!/chefninolxfactory?fref=ts">Anna and Nini</a> said yes immediately and since then they were so cool about making all my wishes come true {*smile}.

Their place is so pretty and I knew I don't need to do some extra decorations, but I wanted just some small personalised touches..and here enters <a href="http://www.dealmaecoracao.com/">Rita</a>, with her great style and amazing work.<br />
I just loved, loved, loved what she did (go<a href="http://www.dealmaecoracao.com/blog/2012/11/um-jantar-especial.html"> here</a> to see more).

These 3 ladies made my dream come true and I am so thankful for all they did. It was such a great dinner and night to remember!!!!<br />

Maja is a very good friend, one of those people you know almost all the life.

She is a part of lot of my memories..happy and sad ones, a person with whom we can spend hours together without speaking a word. We though the same way, we loved a same things.

Now we live more then 3000km away, and we speak from time to time, exchange mails, see each other when I go back home, but even if we try hard, we are not there for each other, we don't exchange our daily experiences and I must admit by the time we got apart....

<br />
<br />
80g butter
<br />
1 orange
<br />
70g sugar
<br />
300g flour
<br />
1ts baking powder
<br />
100g white chocolate
<br />
1 egg
<br />
<br />
Preheat the oven to 180C.
<br />
<br />
Put the butter, sugar, juice and zest of orange and chocolate in a bowl and melt it in a bain-marie.<br />
In the other bowl mix flour and baking powder.
<br />
When chocolate mix is ready, gently add an egg and fold in dry ingredients. <br />
If mix is still sticky add a bit more flour.<br />
<br />
Make small balls with your hands, place on the baking sheet and gently press them.
Bake for 10-12min (they have to stay white, don't let them change the colour).
<br />
If you like , sprinkle some icing sugar over the cookies and they are ready!!

Besides the happiness and good mood that is always present , Rita always come to me with a challenge. And believe me, I do love challenges. <br />

Latest challenge was a dessert table for a special wedding.. a different one, a 'circus wedding' . <br />

I am entering the last week of my thirties and I am in the mood to celebrate.<br />

I want to celebrate every single success or failure, every happy and sad moment, with all of you who cross my path. <br />
I want to celebrate with M. and kids, want to celebrate with friends, with the ones that have their share in my daily life and I want to celebrate with you, who are always here, supporting me in my life change.<br />
<br />
So... there is no celebration without a good chocolate cake. But, since I can't have that, I came up with this crazy good beetroot and carob cake.<br />
Beetroot gives it moist and carob gives it a chocolaty taste, and there is a lot of lemon whose acidity gives that special touch.<br />

A beterraba dá-lhe humidade e a alfarroba dá-lhe um sabor achocolatado, e há bastante limão cuja acidez dá aquele toque especial.<br />

175g spelt flour<br />
1ts baking powder<br />
75g carob flour<br />
250g sugar<br />
250g cooked beetroot<br />
3 eggs<br />
200ml olive oil<br />
1ts vanilla extract<br />
zest and juice of 1 lemon<br />
<br />
Preheat your oven to 180ºC. Mix the dry ingredients in a big recipient, spelt flour, baking powder, carob flour and sugar.<br />
Place the beetroot, olive oil, vanilla extract, lemon zest and juice and eggs in a food processor and process until creamy.<br />
Slowly add the dry ingredients to the beetroot mix and mix well.<br />
Place in a prepared tin and bake for 50-60 min.<br />

175g de farinha de espelta<br />
1 colher de chá de fermento em pó<br />
75g de farinha de alfarroba<br />
250g de açúcar<br />
250g de beterraba cozida<br />
3 ovos<br />
200ml de azeite<br />
1 colher de chá de extracto de baunilha<br />
raspa e sumo de 1 limão<br />

Pré-aqueça o forno a 180ºC. Misture os ingredientes secos num recipiente grande, farinha de espelta, fermento em pó, farinha de alfarroba e açúcar.<br />
Coloque a beterraba, azeite, extrato de baunilha, raspas e sumo de limão e os ovos num processador de alimentos e misture até ficar cremoso.<br />
Lentamente, adicione os ingredientes secos à mistura de beterraba e misture bem.<br />
Coloque numa forma preparada e leve ao forno durante 50-60 minutos.</div>

You would be surprised if I say I spent more then 5 minutes trying to decide how to name this post. <br />
It is post about a dish my mum use to make for me.

My mum worked all her life as a teacher, first as a village teacher , at a time when teachers were really respected and kids would get up early in the morning and walk for few km , on the rain snow or sun to come to the school.
<br />
A lot of generation passed through 'her hands' and I find it amazing how these kids, now adults with there own families, stop her on the street sometimes and say: 'Do you remember me.. I was in your class in the third row', and she does remember.<br />
Even she educated so many kids, she always had time for us. She was and still is tough mum, with a lot of authority, but she dedicated all her life to us...me and my sister.

There is something I inherited from her...we both show our love through food. I so much enjoy to make favourite food for my family and friends. And she does that always. So..this dish is one of the dishes my mum made to me, I love it so much.<br />

Now I changed it a bit, add some ingredients I didn't like as a kid and I hope you will like it also.

<strong><span style="font-size: large;">Baked Eggs</span></strong>
<br />
<br />
1/2 pepper, chopped<br />
handful cherry tomatoes, halved
<br />
1/2 small onion
<br />
2 cloves garlic
<br />
1tbs olive oil
<br />
100g ground beef
<br />
2tbs tomato pulp
<br />
chopped parsley leaves
<br />
2 eggs
<br />
pecorino, finely grated
<br />
1tbs olive oil
salt
pepper
<br />
<br />
Place olive oil in a pan and add garlic and onion. Cook for 1 min and add green pepper and tomato. After 2 minutes add tomato pulp and parsley. Add salt and pepper and 2 tbs water. <br />
Cook for few minutes,add water if needed.
<br />

In a meantime heat the oven to 180C, grill.
When meat and vegetables are cooked place them in individual oven dishes, and place egg on top of each. Sprinkle with grated pecorino and put in the oven.
Bake for 15 minutes or until eggs are cooked.

Sprinkle with some more grated pecorino and serve.

Yesterday my son made me company. He got some stomach bug and was really bad on Sunday (while I was working on the fair and felt really bad about not being able to be with him), and yesterday he didn't go to school and stood home to recover 100%. <br />

He had to drink a lot of tea during the day, and he was not happy about it...so.. I decided to made a tea party for 2 of us. <br />
We baked a simple apple cake and made a pot of tea ,it was pouring rain outside and we had a cosy tea party watching the rain.

<span style="font-size: large;"><strong>Classic Apple Cake</strong></span> <br />
(recipe I discovered on a rice milk pack while I was having breakfast)

200g spelt flour
<br />
50g ground almonds
<br />
3ts baking powder
<br />
200ml rice milk
<br />
6tbs honey
<br />
1 egg
<br />
5tbs olive oil
<br />
5 apples
<br />
2ts cinnamon
<br />
<br />
Preheat the oven to 180C. <br />
Put the four, almond and baking powder in a bowl.
<br />
Mix the egg along with milk and whisk until smooth. Stir in the honey and oil. <br />
Slowly add dry ingredients to the egg mixture.
<br />
<br />
Grease and line 22cm cake tin with baking paper.
Peel the apples and slice thinly placing them directly into the tin. Pour the cake mixture over apples and bake for 30 min.<br />
Leave to cool.<br />

I won't write here how much work I had last week, we all have.<br />
What I want to write about is how to try to eat good in these days.

When I worked in my profession in big corporations, there were days when I would pick something from machine and had my lunch at 15h . I wouldn't even take time to eat it peacefully, I would had lunch on my desk while working ( I am sure you know what I am speaking about). <br />
I started to realise how bad I felt after that, my tummy would hurt and I wouldn't feel good, so I started to bring my lunch from home. I would prepare a meal a day before, with some fruit or dry fruits as snack.<br />

Now I work from home and even I can organise my time , there are days that I need to make an effort to stop, take some time to prepare my meal. In these days I use to make something like this Crostini, quick but tasty and healthy. <br />
You can make it in advance and bring to work in your lunchbox , they are tasty even a day after.<br />

1 slice of spelt sourdough bread ( or any other kind you like)
<br />
1/2 pear
<br />
2 slices of fresh goat cheese
<br />
lemon thyme
<br />
olive oil
<br />
honey
<br />
walnuts
<br />
<br />
Preheat the oven to 180ºC.
<br />
Top a slice of bread with some olive oil and goat cheese. Place bread with in the oven for 10 min.
Core and thinly slice a pear. <br />
When bread is ready ,take it out from oven and place pear on top. together with some lemon thyme leaves.
Sprinkle with some extra olive oil and honey. <br />
If you like, place some walnuts on top.<br />

Last week we had am unexpected visit. <br />
Mean Mr. Virus came again. <br />
We were not prepared for this visit. We tried everything , all natural methods, to defend ourselves .For some of us it was enough, for me it was not. After days of trying to deal with Mr. Virus I put white flag out, and called Mr. Antibiotic for help.

So..now when Mr. Virus is almost leaving our house, I wanted to share a secret. There was one thing that helped us passed this last day..Mrs. Soup. She was so comforting, hot and tasty. Our bodies craved for her. <br />

<strong><span style="font-size: large;">Hokaido Pumpkin and Ginger Soup</span></strong>
<br />
<br />
1/2 medium onion, chopped
<br />
2 cloves garlic, chopped
<br />
1 medium hokaido pumpkin
,cleaned and sliced<br />
1 small ginger root, peeled and grated
<br />
1 medium potatoes, peeled and sliced
<br />
1 tbs olive oil
<br />
1l vegetable stock
<br />
1ts ground cumin<br />
50 ml coconut milk
<br />
salt and pepper
<br />
<br />
Put onion,garlic, ginger, potato, pumpkin, ground cumin, salt, pepper and stock in a large pot and leave to cook in a covered pot. Cook for 30 minutes or until vegetables are tender.
Puree soup with blender and add olive oil and coconut milk.
If needed, add more water and adjust seasoning.<br />

Despite not being Italian, neither ever lived in Italy (for more than 1 month), whenever I'm in Italy, I feel as I am home.<br />
In Italy everything goes around food and wine. Every village, every house, has its own specialty which they are proud of. This was my first time visiting the Abbruzo region and it happened the same.<br />
Italian Nonna welcomed us to her house, happy to teach us some of her favourite recipes. Nonno came along and, a bit latter, a neighbour stopped by. The house was full, but she kept working and explaining... and she was so happy having all of us there.<br />
We made some Caggionetti, Abruzzo’s traditional Christmas treats, and they were divine.<br />

Apesar de não ser italiana, nem nunca ter vivido em Itália (mais de 1 mês), sempre que estou na Itália, sinto-me como se estivesse em casa.<br />

A Italiana Nonna acolheu-nos em sua casa, feliz por nos ensinar algumas das suas receitas preferidas. Nonno também apareceu e, pouco tempo depois, um vizinho apareceu. A casa estava cheia, mas ela continuou a trabalhar e a explicar... e estava muito contente por nos ter todos lá.<br />

The next day we had a class with <a href="http://www.herriottgrace.com/">Nikole Herriott</a> and <a href="http://jencausey.blogspot.pt/">Jennifer Causey</a>.<br />
<a href="http://www.herriottgrace.com/">Nikole</a> was styling and <a href="http://jencausey.blogspot.pt/">Jen</a> was photographing. For me it was a great experience watching two of the people that I really admire, working and complementing each other.<br />
We tried to style and photograph our own sets... I loved the experience.<br />

I checked the weather forecast on Friday. Raining on Sunday, they said.<br />
I imagined a cosy day under the blanket, watching movies or reading a book.<br />
I imagined an afternoon tea with a piece of cake.<br />

But... things usually don't go the way we imagine (at least in my case).<br />
My Sunday was not in front of TV or reading a book.<br />
I didn't have an afternoon tea, I just ate the piece of cake with one hand doing some other things with the other.<br />
There was a lot of work to be done, homework, exercises, reading, cooking... and I know that next Friday I'm going to check the weather forecast again and make cakes imagining a cosy afternoon or a picnic day... because next Sunday I may have a day as I imagined.<br />

Consultei a previsão do tempo na sexta-feira. Chuva para domingo, segundo eles.<br />
Imaginei um dia agradável debaixo do cobertor, a ver filmes ou a ler um livro.<br />

Mas... as coisas normalmente não correm como imaginamos (pelo menos comigo).<br />

<strong><span style="font-size: large;">My Mother's Simple Cake</span></strong>

4 eggs<br />
12tbs sugar<br />
1/2 cup milk<br />
1/2 cup olive oil<br />
1ts baking powder<br />
12tbs flour<br />
strawberries <br />
<br />
Preheat the oven to 180ºC<br />
Beat together the eggs and sugar until pale. Mix in milk and olive oil. Mix the flour and baking powder. Carefully fold into the egg mixture.<br />
<br />
Pour half of the mixture into the baking dish (square or round), lined with baking paper. Bake for 10 min. Place the strawberries on top and add the rest of the mix. Bake until golden (around 25min) or until skewer inserted into the center comes out clean.<br />

<br />
4 ovos
12 colheres de sopa de açúcar<br />
1/2 chávena de leite<br />
1/2 chávena de azeite<br />
1 colher de chá de fermento em pó<br />
12 colheres de sopa de farinha<br />
morangos<br />
<br />
Pré-aqueça o forno a 180ºC<br />
Bata os ovos e o açúcar até ficar pálido. Misture leite e azeite. Misture a farinha e o fermento em pó. Cuidadosamente junte à mistura do ovo.<br />
<br />
Coloque metade da mistura na forma (quadrada ou redonda), forrada com papel vegetal. Leve ao forno durante 10 min. Coloque os morangos por cima e adicione o restante da mistura. Leve a dourar no forno (cerca de 25min) ou até que um palito inserido no centro saia limpo.</div>

In small Italian villages it's usual that the market goes from one place to the other during the week and we were lucky that, on Thursday, was the market day in Roseto.<br />

It was quite small but full of great things... cheese, sausages, fish, vegetables, fruits... my eyes were wide open, my nose was trying to absorb all of the fragrances, I was in paradise!!<br />

Nas vilas pequenas italianas, é normal o mercado ir de um lugar para o outro durante a semana e nós tivemos sorte de, na quinta-feira, ser o dia de mercado em Roseto. <br />

Era pequeno, mas cheia de coisas óptimas... queijo, salsichas, peixe, legumes, frutas ... os meus olhos estavam bem abertos, meu nariz estava a tentar absorver todos os aromas, eu estava no paraíso!</div>
