Pasta with mint pesto and peas

Hello everybody, how was your weekend?
I had a really stressful Saturday morning, trying to deliver a wedding cake with transit completely cut and not being able to reach the restaurant. It was such a nightmare and, when we finally reached the restaurant, I was shaking and couldn't bring a cake in {*smile}. I didn't have such a stress for a long time.

The rest of the weekend was calm and I had the chance to go through my cookbooks and magazines and noticed that there's almost always the same kind of food catching my eye... pasta!!

So I decided to try a different kind of pasta every week and share the recipe with you. I will use my cookbooks, magazines or invent something by myself and I hope you will like it.

Today I used a recipe of Pasta with Mint Pesto and Peas from Donna Hay Magazine. Added this or that and got the perfect lunch for me.

Olá a todos, como foi o vosso fim-de-semana?
O meu foi bastante stressante no manhã de sábado, a tentar entregar um bolo de casamento com trânsito completamente cortado e a não ser capaz de chegar ao restaurante. Foi um pesadelo e, quando finalmente chegamos, eu tremia e não conseguia trazer um bolo {*smile}. Não tinha um stress tão grande já há muito tempo.

O resto do fim-de-semana foi calmo e tive hipótese de passar pelos meus livros de receitas e revistas e reparei que há quase sempre o mesmo tipo de comida a tomar a minha atenção... massa!!

Por isso decidi experimentar um tipo diferente de massa todas as semanas e partilhar a receita com vocês. Vou usar os meus livros de receitas, revistas ou inventar algo por mim e espero que gostem.

Hoje usei uma receita de Massa com Pesto de Hortelã e Ervilhas da Donna Hay Magazine. Adicionei isto ou aquilo e consegui o almoço perfeito para mim.

Pasta with Mint Pesto and Peas

handful of mint leaves
less than a handful parsley leaves
juice of one lemon
1ts salt
1 garlic clove
1 tbs olive oil (use more if needed)
2 tbs pine nuts
1/4 cup blanched peas

Place the mint and parsley leaves, lemon juice, garlic, olive oil, salt and pine nuts in the bowl of a food processor and process until smooth (add more olive oil if needed).
Place the cooked pasta in a pan, add mint pesto, peas and extra mint leaves and mix to combine.
Top with finally grated pecorino to serve.

Massa com Pesto de Hortelã e Ervilhas

um punhado de folhas de hortelã
menos de um punhado de salsa
sumo de um limão
1 colher de chá de sal
1 dente de alho
1 colher de sopa de azeite (use mais se necessário)
2 colheres de sopa de pinhões
1/4 chávena de ervilhas descascadas

Coloque as folhas de hortelã e salsa, o sumo de limão, alho, azeite, sal e pinhões na tigela de um processador de alimentos e esmague até ficar suave (adicione mais azeite se necessário).
Coloque a massa cozida numa panela, adicione o pesto de hortelã, as ervilhas e as folhas de hortelã extra e misture para combinar.
Finalmente cubra com queijo pecorino ralado, para servir.

  9. This looks delicious. Im allergic to garlic though.. if I left it out would it really change the flavour do you think? and is the pesto really minty? I can't seem to imagine it at all! My bf would love this dish. I must mail him the link ^_^

    1. Yes,you don't need to put garlic and pesto is really minty.My 9 years daughter tried and asked immediately if it has mint in it :-)

  13. tão simples e eu aqui sem ideias! esta semana tem sido muito à volta do frigorífico e de uma resistência grande em sair de casa à hora de almoço para ir comprar qualquer coisa à mercearia para fazer. portanto era abrir a porta e pensar "ora bem o que é que se pode fazer daqui?!" e claro muita coisa "vegetariana" saiu! para a próxima já sei! parece-me delicioso! beijinhos
