Oatbake with blueberries and apple


There is not much to say about Scandinavian Design. So many books, magazines, blogs write about it and I am an absolute fan.

But I'm not just fan of their design... I'm also a fan of their baking. I love the spices that they use and love rye and barley breads of all kinds.

As I already mentioned, my favorite cookbooks are from Swedish Chef Leila Linholm. I have both her books and I 'visit' them very often.

Lately I got myself Nordic Bakery Cookbook and already made a few things from it, but never got time to take photos {*smile}. Yesterday I didn't let anybody approach the oat bake until I took photos. The original recipe is with blueberries and raspberries but, unfortunately, in Portugal you have to pay a fortune for them, so I adapted it to apples and blueberries (had some frozen from summer). Hope you enjoy as we did yesterday afternoon, with a cup of tea.

Não há muito a dizer sobre o design escandinavo. Hã bantantes livros, revistas, blogs sobre isso e eu sou uma fã incondicional.

Mas eu não sou apenas fã do seu design... sou também fã da sua panificação. Adoro os temperos que eles usam e adoro os pães de centeio e cevada de todos os tipos.

Como já referi, os meus livros de receitas preferidos são os da Chef Sueca Leila Linholm. Tenho os dois livros dela e "visito-os" regularmente.

Há pouco tempo ofereci-me o Nordic Bakery Cookbook e já fiz algumas coisas com ele, mas não cheguei a ter tempo para tirar fotos {*smile}. Ontem não deixei ninguém aproximar-se da massa de aveia até tirar fotos. A receita original é com mirtilos e framboesas mas, infelizmente, em Portugal tem de se pagar uma fortuna por elas, por isso adaptei-o para maçãs e amoras (tinha algumas congeladas do Verão). Espero que gostem como tanto quanto eu gostei ontem à tarde, com uma chávena de chá.



Ingredients:

100g rolled oats
300ml hot milk
100g unsalted butter, room temperature
60g sugar
50ml honey
1 egg
1ts baking powder
120g flour
1 handful of blueberries
1 big apple, sliced
1 ts cardamom
1 ts cinnamon

Method:

Preheat you oven to 180C

Put the oats and hot milk in a mixing bowl and set aside for a few minutes to allow oats to absorb most of the milk and to cool down slightly.

Cream the butter and sugar until pale and fluffy. Stir in the honey. Add egg beating well after addition.

Stir baking powder and flour together then fold into the butter mixture. Drain any remain liquid from the oats and stir into the mixing bowl.

Pour the mixture into the prepared loaf tin. Slice apple and mix with cardamom and cinnamon. Place on top of the loaf. Sprinkle with blueberries.

Bake for 50-60 min.
