Coconut Rice Pudding with Strawberries and Pistachio

My mum never made rice pudding. She said that, as a kid, she ate so many of it during Second World War that she can't even look at it.
So... I never ate rice pudding as a kid, and even more, as I heard my mum saying this story few times, I thought it is something not so tasty and didn't even want to try it when I had chance.

And then I moved to Portugal, country where arroz doce (sweet rice) is the most common dessert. Hmmmm... for someone who didn't had a rice pudding in front really often for 30 years of life, this was kind of a shock. I was asking myself, how can THAT be the most common dessert.. something worshiped??? Until the day I gave it a chance and tried it.

Yes, I liked it, but it still didn't come to the point to order it in restaurant as a dessert, or make it at home. I felt something is missing there...

And then I made it for the first time at home, rice pudding with crunchy caramel. And yes... that was something different. I loved it!! And I started thinking about more possibilities, variations...

Rice pudding with strawberries and pistachio is a summer version and it's made with coconut milk (you can use cow milk with/without cream), since I can't eat cow milk.

Coconut Rice Pudding with Strawberries and Pistachio

80g arborio rice
400ml coconut milk

1tbs superfine sugar

Place the rice, coconut milk and sugar in a medium pan over high heat and bring to the boil. Reduce heat to low and cook, stirring occasionally, for 25-30 minutes or until rice is tender.
In the meantime cut the strawberries, and mix with lemon juice and sugar. Leave in the fridge.

Granola

My mornings are more or less always the same. Get up at 7:30, put water to boil and make my coffee.
Put the table and start preparing breakfast. I got to have my breakfast as soon as I get up.

My breakfasts have two leading roles... bread and granola. I eat one or the other... and a cup of coffee, of course. Simply because I love to start my day or with a slice of bread or with granola.

Granola is something that I make for me and for kids. Mine is with rolled spelt and dry cranberries and kids love it with chocolate and raisins. Granola can be done in many different ways, depending on what you like. It's a perfect way to start the day for me.

What do you usually eat for breakfast?

Ponho a mesa e começo a preparar o pequeno-almoço.

Granola

300g rolled spelt flakes(or rolled oats)
20g rice puffs
50g sunflower seeds (or pumpkin seeds or combine both)
30g unsweetened coconut chips
30g slivered almonds
35g chopped hazelnuts
1/2tbs olive oil
1/4ts sea salt
80ml honey
80ml water
1ts vanilla extract
50g dry cranberries

Preheat the oven to 150ºC and line the baking sheet with parchment paper.
In a small pot, combine the water, honey, olive oil, salt and vanilla. Bring to a simmer.
In a large bowl, combine the other ingredients minus the dry cranberries. Stir in the liquid to the dry ingredients.
Transfer the granola mixture to the baking sheet and cook for 45 minutes, stirring with a wooden spoon a few times to make sure that the granola cooks evenly. Let cool completely.
Add the dry cranberries and transfer to a container.

*****

80ml mel
80ml de água
1 colher e chá de extrato de baunilha
50g de arandos secos

Pré-aqueça o forno a 150ºC e forre o tabuleiro com papel vegetal.
Numa panela pequena, misture a água, o mel, azeite, sal e a baunilha. Deixe ferver.

Chocolate and Corn Flakes Slices

It is so cold outside that I can’t go with the kids to the park (which is near). So, on Monday, we were at home and decided to make some kind of cookies/slices.

Chocolate and corn flakes… and some cream on top… really crunchy and at the same time creamy.

But in the end it turns out as a really bad idea… kids got really angry with each other, big discussion about who is going to eat the rests from bowl, mixer and spoons… crazy!!!

Berry and Coconut Rice Pudding

After making coconut cupcakes last week, I stood with a coconut milk I didn’t use. So... since M. is a big fan of arroz doce I decided to make it with coconut milk instead of normal milk. Made some berry sauce and dip arroz doce into it, fresh fruits and almonds on top ..and here it goes, a week winner!!
