Plum and Peach Pie

One reason why I love going to food workshops and cooking classes, is the chance to meet the other foodies, people that are obsessed with cooking and food as I am. We think and act the same way when we are inside the kitchen and around the food. It's always so much fun and I come back home even more inspired.

On Saturday I went to a cooking class with Sarah Britton from My New Roots.
She was amazing! We cooked and laughed, had new food experiences and the most amazing dinner.

On Sunday, when I woke up, I just had to cook. It was a grey, rainy day so, what could be better than baking? I wanted a tart (my autumn obsession with tarts continues) and went for Donna Hay's recipe of Plum Tart.
I will just tell you that this pie pastry is amazing! It became definitely my favourite... so light and fluffy.

Uma das razões pela qual eu adoro ir a workshops e aulas de cozinha, é a oportunidade de conhecer outros foodies, pessoas que são tão obcecadas por cozinha e comida como eu sou. Pensamos e agimos da mesma forma quando estamos dentro da cozinha e à volta da comida. É sempre muito divertido e eu volto para casa ainda mais inspirada.

No sábado fui a uma aula de culinária com a Sarah Britton de My New Roots.
Ela foi incrível! Nós cozinhamos e rimos, tivemos experiências novas com comida e um incrível jantar.

No domingo, quando acordei, tinha de cozinhar. Estava um dia cinzento e chuvoso, por isso, o que poderia ser melhor do que cozinhar? Eu queria uma tarte (a minha obsessão de Outono por tartes continua) e fui para uma receita da Donna Hay de Tarte de Ameixa.
Vou apenas dizer-vos que esta massa de tarte é maravilhosa! Tornou-se definitivamente a minha preferida... tão leve e fofa.

Plum and Peach Pie

Plum and Peach Almond Pie
(adapted from Seasons by Donna Hay)

1 quantity of pie pastry
60g ground almonds
6 plums
1 peach
2tbs honey
1 egg white, lightly beaten, for brushing
granulated sugar for sprinkling

Preheat the oven to 160ºC. Divide the pastry in half and roll out each piece.
Line the base of the shallow pie dish with a piece of pastry and sprinkle with ground almonds.
Place the plums and peach in a bowl and toss with honey. Arrange on the top of the ground almonds.
Cut circles from the remaining pastry with a round cookie cutter. Arrange the circles around the edge of the pie, brush with the egg whites and sprinkle with sugar.
Bake the pie for 35min or until pastry is golden and crisp.

Pie pastry

250g spelt flour
1tbs vanilla sugar
1/4ts baking powder
180g soy margarine
50ml cold water

Place the flour, sugar, baking powder and margarine in a mixer and process until the mixture resembles fine breadcrumbs.
Gradually add the water and process until mixture comes together and form smooth pastry (if it is too sticky, add some more flour).
Wrap in a plastic wrap and place in the fridge for 30 min before using.

Tarte de Amêndoa com Ameixa e Pêssego
(adaptado de Seasons por Donna Hay)

1 quantidade de massa de tarte
60g de amêndoas moídas
6 ameixas
1 pêssego
2 colheres de mel
1 clara de ovo, levemente batida, para pincelar
açúcar granulado para polvilhar

Pré-aqueça o forno a 160ºC. Divida a massa ao meio e estique cada parte.
Cubra a base do prato raso de tarte com um pedaço de massa e polvilhe com as amêndoas moídas.
Coloque as ameixas e pêssego numa tigela e misture com mel. Disponha por cima das amêndoas moídas.
Corte círculos da massa restante com um cortador de biscoitos redondo. Disponha os círculos ao redor da borda da tarte, pincele com a clara de ovo e polvilhe com açúcar.
Leve a tarte ao forno durante 35min ou até a massa dourar e ficar crocante.

Massa da tarte

250g de farinha de espelta
1 colher de açúcar de baunilha
1/4 colher de chá de fermento em pó
180g de margarina de soja
50 ml de água fria

Coloque a farinha, o açúcar, o fermento em pó e margarina numa batedeira e bata até a mistura parecer pão ralado.
Aos poucos, adicione a água e bata até a mistura começar a juntar e formar massa suave (se estiver muito pegajosa, adicione mais um pouco de farinha).
Embrulhe em filme aderente e coloque no frigorífico durante 30 minutos antes de usar.

Poppy Seeds Pie


If you ever lived abroad you know how sometimes the food that you used to eat on a daily basis, can be subject of desire.
When I arrived here 12 years ago, there were some ingredients and some food that I couldn't find and I missed a lot. For some of them I didn't even knew the name in english/portuguese and I was not even able to describe what I was searching for.
Every time I would go back to visit my family I would come home with bag full of food!!

One of the ingredients on the list was poppy seeds. For some reason in Portugal they are not used a lot (or at all). I remember when, some years ago, I made a cake with poppy seeds to bring to the office... everybody looked at me with really suspicious faces.
Now it is easier to find it here and I am so happy about it. Now I can make all of those lovely things that I used to eat.
I love poppy seeds, their crunchiness in cakes, breads and pies.
When we eat it at home we always laugh to each other, we stay with mouth full of small black seeds {*smile}...

Se já viveu no exterior sabe como às vezes a comida que costumava comer diariamente, podem ser objecto de desejo.
Quando aqui cheguei há 12 anos, havia alguns ingredientes e comida que não conseguia encontrar e da qual sentia bastante falta. Para alguns deles nem sabia o nome em Inglês/Português e nem sequer era capaz de descrever o que estava à procura.
Cada vez que voltava para visitar a minha família, regrassava a casa com o saco cheio de comida!

Um dos ingredientes na lista era sementes de papoila. Por alguma razão em Portugal não são muito usadas ​​(ou de todo). Lembro-me quando, há alguns anos, fiz um bolo com sementes de papoila para trazer para o escritório... todos olharam para mim com umas caras muito desconfiadas.
Agora é mais fácil encontrá-los aqui e estou muito feliz com isso. Agora posso fazer todas essas coisas bonitas que costumava comer.
Adoro sementes de papoila, o seu efeito crocante nos bolos, pães e tartes.
Quando comemos em casa sempre nos rimos uns dos outros, porque ficamos com a boca cheia de pequenas sementes pretas {*smile}...


Poppy Seeds Pie
(adapted from Kasicica Secera i Prtohvat Soli where you can find photos with instructions)

Dough:
430g spelt flour **
100g soy margarine *
150ml soy milk *
1,5 ts dry yeast
60g sugar
1 egg + 1 egg yolk
bit of salt

Melt the margarine and leave to cool. Mix yeast and hot milk. Add margarine, egg, egg yolk and sugar. Add flour slowly and mix until you get dough that doesn't stick to your fingers. Let it rise for 1 hour.

Fill:
100g poppy seeds
80ml soy milk *
50g sugar

Heat the milk just until it start to boil and pour over poppy seeds and sugar. Mix and leave to cool.

Roll the dough with a rolling pin until you get 30x40cm square.
Cut into 3 and fill with poppy seeds mixture.
Roll to get 3 'sausages'. Put the 'sausages' into the baking tin. Bake on 180ºC.

*You can replace soy milk and margarine with cow milk and butter
**You can replace spelt flour with wheat flour

Tarte de sementes de papoila
(adaptado de Kasicica Secera i Prtohvat Soli onde pode encontrar fotos com as instruções)

Massa:
430g de farinha de espelta **
100g de margarina de soja *
150ml de leite de soja *
1,5 colheres de chá de levedura seca
60g de açúcar
1 ovo + 1 gema de ovo
uma pitada de sal

Derreta a margarina e deixe arrefecer. Misture o fermento e o leite quente. Adicione a margarina, o ovo, a gema de ovo e açúcar. Adicione a farinha aos poucos e misture até obter uma massa que não cole nos dedos. Deixe crescer por 1 hora.

Recheio:
100g de sementes de papoila
80ml de leite de soja *
50g de açúcar

Aqueça o leite apenas até começar a ferver e despeje sobre as sementes de papoila e açúcar. Misture e deixe arrefecer.

Abra a massa com um rolo até obter um rectângulo de 30x40cm.
Corte em 3 e preencha com a mistura de sementes de papoila.
Role para obter 3 'salsichas'. Coloque as 'salsichas' no tabuleiro do forno. Coza a 180ºC.

* pode substituir o leite e a margarina de soja por leite de vaca e manteiga
** pode substituir a farinha de espelta com farinha de trigo

Burek..oh how much I miss you

I realised yesterday that it passed more than two months since I got the results of my food intolerance test. These two months passed learning how to eat in a different way. New ingredients, new recipes (from which a lot were failures), ups and downs and now I can surely say that I feel much better in all aspects.

But I have to admit that there are a few dishes that I miss really badly. Burek is the first on the list.
It's a typical dish that we eat back home, made with filo pastry.
Since I never learned how to make filo pastry and I can't eat the wheat version that you can find in supermarkets... I just don't eat it.
Last time that I was home, I told my mum how desperately I miss burek and she promised me that she will try to make pastry with spelt flour. Just on thinking that possibility, I get so excited! {*smile}

In the meantime, I make burek with cheese for my family (since my kids are big fans also), and dreaming on going back home and eating spelt version from my mum...

Percebi ontem que passaram mais de dois meses desde que recebi os resultados do meu teste de intolerância alimentar. Estes dois meses passaram a aprender a comer de forma diferente. Novos ingredientes, novas receitas (das quais muitas falharam), altos e baixos e agora posso com toda a certeza dizer que me sinto muito melhor em todos os aspectos.

Mas tenho de admitir que há alguns pratos que eu sinto tanta falta. Burek é o primeiro da lista.
É um prato típico que nós comemos na minha terra natal, feito com massa filo.
Como nunca aprendi a fazer massa filo e não posso comer a versão de trigo que se pode encontrar nos supermercados... simplesmente não o como.
A última vez que estive em casa disse à minha mãe como sinto desesperadamente falta de burek e ela prometeu-me que vai tentar fazer a massa com farinha de espelta. Só de pensar nessa possibilidade, fico tão animada! {*smile}

Entretanto faço burek com queijo para a minha família (uma vez que os meus filhos são grandes fãs também), e sonho em voltar para casa e comer a versão de espelta da minha mãe...


Burek with Cheese

200g feta cheese
200g cottage cheese
2 eggs
200ml sour cream
1 pack (250g) filo pastry
sunflower oil for brushing

Break the feta cheese with a fork. Add cottage cheese and mix. Add the cream and eggs and mix again until everything is incorporated.
Brush the dish that you will use to place burek, with oil. Take one sheet of filo pastry, brush with sunflower oil and place other sheet on top of it.
Place a few spoons of cheese filling on the top of the filo sheet (on the longer side), leaving 2cm edges empty. Roll pastry and place in a dish (if you use a round dish go from the edge to the centre). Continue until you finish all filling and pastry. Brush burek with oil.
In a meantime heat the oven to 180ºC. Place the burek in the oven and cook around 40min (or until it gets a nice colour). If you see that it is starting to get burned, place an aluminium foil on top of it.
Eat it hot with some yogurt.

Burek com Queijo

200g de queijo feta
200g de queijo cottage
2 ovos
200ml natas azedas
1 pacote (250g) de massa filo
óleo de girassol para untar

Parta o queijo feta com um garfo. Adicione o queijo cottage e misture. Adicione as natas azedas e os ovos e misture novamente até que tudo esteja incorporado.
Pincele o prato que vai usar para colocar burek, com óleo. Pegue numa folha de massa filo, pincele com óleo de girassol e coloque outra folha por cima.
Coloque algumas colheres do recheio de queijo por cima da folha filo (no lado mais comprido), deixando 2cm vazios nas arestas. Enrole a massa e coloque num prato (se usar um prato redondo ir da borda para o centro). Continue até terminar todo o recheio e massa. Pincelar o burek com óleo.
Entretanto aqueça o forno a 180ºC. Coloque o burek no forno e coza durante aproximadamente 40min (ou até que fique com uma cor agradável). Se vir que está a começar a queimar, ponha uma folha de alumínio por cima.
Coma quente com um pouco de iogurte.

Pita



This is my comfort food, my favorite one, something I could eat every day.
It's a typical dish from my country. And there are so many variations of it... potato, pumpkin, spinach, meat, cheese. Say what you like and you will get it.
There are sweet versions also... with apple, cherries... oh... and I love all of it {*smile}.
I won't say that my mother and my aunts make the best ones (even if I really believe in it), because I think every family has it's own way and secret recipe.
It's made with Filo Pastry, but if you want the best result you have to make pastry by yourself.
I loved to see my mum doing it. Putting big sheets on the floor and spreading pastry, stretching on a gently way... it looked like magic... and I still don't know how it is possible to get such a tiny transparent pastry sheets without making whole on it.
I don't know to make it by hand, but I miss Burek so much that I make it for us with pastry that I buy in the supermarket... it is some replacement for now... until I get the courage to learn to make my own {*smile}

Esta é a minha comida de conforto, a minha preferida, algo que eu poderia comer todos os dias.
É um prato típico do meu país. E há tantas variações... batata, abóbora, espinafre, carne, queijo. Diga o que gosta e vai tê-lo.
Há versões doces também... com maçã, cerejas... oh ... e eu adoro-as todas {*smile}.
Não vou dizer que minha mãe e as minhas tias fazem as melhores (mesmo que realmente acredite nisso), porque acho que cada família tem sua própria maneira e receita secreta.
É feita com Massa Filo, mas se quisermos o melhor resultado temos de fazer nós mesmos a massa.
Eu adorava ver minha mãe a fazer isso. Colocar os lençois grandes no chão e espalhar a massa, alongando de forma suave... parecia magia... e ainda não sei como é possível obter folhas tão finas de massa transparente sem fazer buracos.
Eu não sei fazer manualmente, mas sinto tantas saudades de Burek que faço para nós com a massa que compro no supermercado... é uma substituição por agora... até conseguir ter coragem para aprender a fazer a minha {*smile}

Lime pie

Being foreigner in a foreign country for me is connected with being eager to meet and know new people, make friends.
And my experience tell me that is what happened with most of foreigners.
I use to go to same park with my kids every day and use to see same mums with kids...that is how I met my foreign mums . We were attracted like magnets, this eagerness to meet and know other people just put as together.
So....besides meeting in the park with kids we also meet at least once a month for dinner out or in house of one of us.
These dinners are pure gourmet dinners...we always experiment new recipes, try to match what will each of us make...it is great!!!
‘February dinner’ was this week and I was in charge of desert , lime pie...

Burek

One of the most usual question people ask here, when I say I am from Bosnia, is what is traditional Bosnian food. Really often I leave it to my husband to explain it ,I am not objective on this item :-).
Personally I think Bosnian food is a big mix of various influences but one dish for me is really typical. It is BUREK ,kind of meat pie. I just can’t live without it...so I make my own version ,since here I don’t have all ingredients that I need, and it is enough to survive until I go back home and eat one prepared by my mother.
