Burek..oh how much I miss you

I realised yesterday that it passed more than two months since I got the results of my food intolerance test. These two months passed learning how to eat in a different way. New ingredients, new recipes (from which a lot were failures), ups and downs and now I can surely say that I feel much better in all aspects.

But I have to admit that there are a few dishes that I miss really badly. Burek is the first on the list.
It's a typical dish that we eat back home, made with filo pastry.
Since I never learned how to make filo pastry and I can't eat the wheat version that you can find in supermarkets... I just don't eat it.
Last time that I was home, I told my mum how desperately I miss burek and she promised me that she will try to make pastry with spelt flour. Just on thinking that possibility, I get so excited! {*smile}

In the meantime, I make burek with cheese for my family (since my kids are big fans also), and dreaming on going back home and eating spelt version from my mum...

*****

A última vez que estive em casa disse à minha mãe como sinto desesperadamente falta de burek e ela prometeu-me que vai tentar fazer a massa com farinha de espelta. Só de pensar nessa possibilidade, fico tão animada! {*smile}

Burek with Cheese

200g feta cheese
200g cottage cheese
2 eggs
200ml sour cream
1 pack (250g) filo pastry
sunflower oil for brushing

Break the feta cheese with a fork. Add cottage cheese and mix. Add the cream and eggs and mix again until everything is incorporated.
Brush the dish that you will use to place burek, with oil. Take one sheet of filo pastry, brush with sunflower oil and place other sheet on top of it.
Place a few spoons of cheese filling on the top of the filo sheet (on the longer side), leaving 2cm edges empty. Roll pastry and place in a dish (if you use a round dish go from the edge to the centre). Continue until you finish all filling and pastry. Brush burek with oil.
In a meantime heat the oven to 180ºC. Place the burek in the oven and cook around 40min (or until it gets a nice colour). If you see that it is starting to get burned, place an aluminium foil on top of it.
Eat it hot with some yogurt.

Have a nice weekend!!!

*****

Burek com Queijo

200g de queijo feta
200g de queijo cottage
2 ovos
200ml natas azedas
1 pacote (250g) de massa filo
óleo de girassol para untar

Parta o queijo feta com um garfo. Adicione o queijo cottage e misture.
Entretanto aqueça o forno a 180ºC.

Fava Beans and a Crazy Week

We had one anniversary and party and then another birthday and party with the interval of one week. We had a great time, everybody was happy but I have to admit it was completely exhausting for me...
When I have a lot on my To Do list I get in such an anxiety, and I just think about what I have to do. I wake up in the middle of night going through the list... I know, it's crazy!!

If there was a chance to change something, I would change that part of me. In these two weeks I wished so many times that the day had more than 24 hours.
Entering that crazy cycle usually influences my meals. I start to think that I don't have time to prepare something decent, and I just eat the first thing that I see in front... which makes things even worst. This time I succeeded at least not to come to that point.

In the beginning of the week, a friend of mine brought me a bag full of fava beans and peas from her aunt's garden.
That is basically what kept me during the week. I made a lot of variations of salads with beans and soups and I had great meals.

This one was with arugula, pine nuts, blanched beans, feta cheese and radish, my favourite!!

*****

A entrada neste ciclo louco normalmente influencia as minhas refeições.

Butternut Pumpkin Crostini

For me bread is essential... it's something I love more than everything. I can eat it just with butter, or olive oil, roast it and use in salads and soups, use it as crunchy toppings for roasted vegetables...
Right now I can think about thousands of way to use it. It is a basic ingredient for me.

When I don't have a lot of time for lunch, or I don't have ideas for what to make, I go back to basics. A slice of bread with a bowl of soup. When I say slice of bread, I don't mean plain bread without nothing... here my imagination doesn't have limits.

Last week i made these crostini (I had to roast squash for our dinner) with goat cheese and butternut squash... easy and delicious.

A slice of sourdough bread, topped with some olive oil and goat cheese, 10 minutes in the oven at 220ºC, some roasted squash (which I roasted with thyme and garlic) on top and that's it.
Perfect!!!

Perfeito!

Rainy Weekend and Chocolate Gluten Free Cake

Rain finally visited us.
My mum uses to say that the air is really special after the rain, and I agree. It is fresh and purified, and one thing I love to do is to have a walk after it rains.
That was exactly what we did this weekend.

We walked a lot, went to the cinema, wandered around, did a lot of gardening on our terrace and had great meals.
I made a great gluten free chocolate cake for M. He ate one piece and asked for more.
The cake was based on a recipe from Betrice Peltre's new book and I added salted chocolate ganache and roasted seeds.

The result was great...

We had really nice, calm, rainy weekend. What about you?

Spelt, Blueberry and Mix Seeds Muffin

Since I started my 'diet', I am experimenting baking with spelt and kamut a lot. In the last days I felt a big need for something sweet, so I decided to try to make a spelt muffins.
I got happy with a result! I will try it with different fruits and maybe having more variety in.
These muffins are great on a rainy day like it is today with a cup of hot tea...

*****

Spelt, Blueberry and Mix Seeds Muffin (makes 6)
(adopted from the Book of Baking by Isidora Popovic)

2 eggs
80g agave syrup (you can use brown sugar also)
50ml olive oil
150g wholemeal spelt flour
1 1/2 tsp baking powder
1 tsp ground cardamom
100g blueberry, fresh or frozen
20g pumpkin and sunflower seeds

Topping
15g pumpkin and sunflower seeds

Preheat the oven to 180C. Line a muffin tray with 6 large muffin cases.
Put the eggs, agave and oil in a mixing bowl and mix well until you have a smooth liquid. Mix the flour, baking powder and cardamom together in a separate bowl, then mix into the wet ingredients. Stir in the blueberries and seeds until evenly mixed.
Fill each muffin case about two-thirds full with batter. Scatter the seeds for the topping over each muffin . Bake for about 25 minutes.
Do not be tempted to open the oven door through baking... it can cause the muffins to sink.

*****

Muffins de Espelta, Mirtilo e Mistura de Sementes (faz 6)
(adaptado do livro Book of Baking de Isidora Popovic)

2 ovos
50ml azeite
150g de farinha de espelta integral
1 1/2 colher de chá de fermento em pó
1 colher de chá de cardamomo em pó
100g mirtilos, frescos ou congelados
20g de sementes de abóbora e girassol

Cobertura
15g de sementes de abóbora e girassol

Pré-aqueça o forno a 180ºC.

Cauliflower Soup and a BIG change

Dear Body,

Sometimes you may think I am neglecting you, but the truth is that I really respect you and try to care about you as much as I can.
I may put you near the limits sometimes... sorry for that.
I know that you have been suffering for quite some time. You even created your army to defend yourself but that didn't go ok, wasn't it? You ended up by attacking your proper organs and you made me taking medication every day for many years. And yes... finally I discovered what your problem is: Mr. Wheat!!!

I know... the list of things that you're complaining about is much, much bigger. Buckwheat, corn, oat, quinoa, carrot, cow milk, egg... but I think that the main problem is Mr. Wheat. He made you so weak that you started to react on all of his friends.

Since I know now, I promise I will take good care of you. I will give you things you like, I will cook a lot with spelt and rice and all of the other things you like and hopefully you will get better. It will challenge me and I am ready to take it!!

*****

Caro Corpo,

Spring in Lisbon

Without any doubt I can say that spring came to Lisbon. And believe me, Lisbon is beautiful in Spring. It is my favourite season... flowers everywhere, clear blue sky, sun...
Saturday I spent all the day out. Market, walk, lunch with a friend, ice-cream... but, when I came back home, I had to bake. I was just thinking of a long Sunday breakfast at my terrace.
I made banana cake with a lot of spices: cardamom, ginger, cinnamon, cloves and I enjoyed it so much on a sunny morning.

How was your weekend?

*****

Fava Beans and Mint Tartine

Despite being really hard sometimes, I promised to myself that just because I have lunch alone most of the times during the week, I won't eat the first thing that I see in the fridge.

I try to make my lunch every day and take my time to enjoy it.

I have to admit that it's not easy sometimes... but even so, I try to make something quick, but good.

This tartine is an example of quick and great lunch. With a plate of soup... just perfect.

*****

Broad Beans and Mint Tartine

1 slice of bread (I used olive bread that I made the day before)
cottage cheese
roasted sunflower and pumpkin seeds
1/2 cup broad beans
olive oil
mint
parmesan cheese
salt and pepper

Boil water with pinch of salt in a pan, add broad beans and blanch for 2 minutes. Take from heat and rinse under cold water to stop the cooking process.
When cold, remove the skin from the beans. Add mint, olive oil and season with salt and pepper.
Spread the cottage cheese and seeds on top of bread. Arrange the beans and mint on top of it and add some shaved parmesan cheese.
Adjust seasoning if needed.

*****

Beetroot Soup

Beets were always magical for me.

As a kid I was impressed with its colour. Even though I loved it's taste, my 'beetroot world' was quite undeveloped. My mum used to make apple, carrot and beet juice and winter salad. And... that was basically it.

In the university, since I studied far from home and ate bad students' food, I used to cook beets on the boiler in my student room and then keep it outside of my window. I ate it just with some simple vinaigrette and that was my force supplement {*smile}.

But, I wanted my 'beetroot world' bigger and richer. I wanted to learn to cook more dishes with it.

And then they came... beet and chocolate cakes, tarts, salads, soups... and I was more and more happy.

So... if you are like me, if you like beet earthy flavour, you will love this soup.

*****

Leite Creme

Last Saturday I went out for dinner with M. to one of my favourite restaurants, Bistro 100 maneiras. Since the first time I went there, I just love the food. So now I go there whenever I can.

Maybe also because of the fact that the chef is from Yugoslavia, and they have some dishes that just reminds me of the food that I eat back home.
Maybe it's the service. Maybe the atmosphere.. or all of it. I just can't help it.

So, we had a great meal and time to speak and reflect and then it was the time to decide what to have for dessert. Since M. is a fan of Leite Creme we ordered it and shared.

*****

Wauuwww... I never ate leite creme like that! Really consistent, creamy, melting in the mouth... we loved it!

And then I came home, but I couldn't stop thinking about that dessert... and I had to try to make it.

Well... to be honest, mine was really good but I still didn't reach that level of perfection. Considering M., I can just keep on trying and he will keep on judging it {*smile}.

*****

Strawberry and Almond Cakes

Love for cooking is the reason why I started Little Upside Down Cake. But this brought a new passion in my life... the passion for photography. I was never interested in photography, didn't like to be a subject on the photos and didn't like to take photos. I am not one of those persons that, since childhood, played around with camera. But all of this changed with the need to present the food I cooked. I started with simple point and shoot camera in automatic mode but, after some time, I felt that I needed to do something about it.
I started a beginners photography course. Worked during the day, cooked in the afternoon and go to the course in the evening. There were days I almost slept on the classes... but I finished, learned the basics and I knew I needed more.
This course was followed by a short Food Photography Course and, in October, I will take a course taught by the great food stylist and photographer Aran Goyoaga.
How great is that ?!?!

I try to practice every day. If I don't work with camera I try to analyse professionals' photos (there are so many great ones I really admire...).
I cook and shoot and I admit that the process can be frustrating sometimes... but I like it. I look at the photo I made and I know what I did wrong, and what I can improve next time, and I try again...

So I hope you like to follow these small steps progress I am trying to make. I need your critics, opinions... it's the best way to learn...

My yesterday lunch

One of the advantages of me staying at home in these last weeks was to be able to prepare my meals every day. I always admire people that cook just for themselves (I thought I would be too lazy for that) and now I had chance to do it also. It was fun to make the food, put the table and have a great meal, slowly enjoying it.

With the high temperatures that we had in the last days I made a lot of salads. And, when making a salad, I always follow the Jamie Oliver rule.

Regarding him, a salad should have:
*soft leaves
*crunchy leaves
*herbs
*cheese
*vegetables
*topping

Topping: Since I love seeds (sunflower,pumpkin..), I always have a jar full of toasted bread and seeds for the salads (my kids love it in the soup also).

Vegetables: In the last month every salad I do has radish. Personally, I could have radish in every meal starting from breakfast.

Cheese: I usually add some mozzarella or parmesan cheese.

Leaves and Herbs: the ones I have at home.

Since I had a lot of egg yolks, for my yesterday lunch I made goat cheese, dry tomato and bacon tart with some nice fresh lemonade and salad. I spent some time on terrace enjoying every bit of it {*smile}.

Do you use to cook for yourself when you are alone?

* folhas macias
* folhas crocantes
* ervas
* queijo
* vegetais
* cobertura
