Chocolate need and Pinterest inspiratios

As some of you may remember, I have a lot of food intolerance and, the one with which I have most problems, is intolerance to cocoa.
What does that mean? It means no chocolate in my life. And that is something very difficult to deal with.

I am thinking of experimenting with carob powder (and in the case it gets ok, I will share it with you). But, until then, I can just cry over chocolate inspirations on my pinterest board.
If you try some of these, please let me know how it went.

*****

Vegetables Frittata

Here in the house, holidays are officially over. After being away for a week, kids came back home, school is starting and all the preparations are done.
Kids are happy, excited, anxious about it... and me, silly me, I feel some kind of sadness. I know they have hard work in front and not so much time to play.

So... here's a promise:
we will do everything to spend every spare moment to go out on fresh air, run, play, climb the trees

we wont care if there is wind or rain

we will laugh and play

we will eat simple but healthy food

we will enjoy every moment we spend together

*****

vamos rir e brincar

vamos comer comida simples mas saudável

vamos aproveitar cada momento que passarmos juntos

Plum and Apple Crumble

After a month of being away and abandoning this space and my kitchen, I am officially back.
I am back into the kitchen with full speed and I have to say I missed it. In the last days I baked a lot, mainly for work, but I wanted to make something for me and M.

*****

While I was in Serbia with my family, spending time in orchard, under the apple and plum trees, I just though how I would love to make some crumble from these pretties.

On Saturday, on the market, I noticed there was a big variety of plums and I just couldn't resist. Their shapes and colours are incredible and the tastes are completely different. I wanted to make crumble using all of these different plums.

We ate it yesterday, with some ice cream, and it tasted so good... felt like if the autumn was near.

*****

My country/ies, Serbia

I was trying to remember when was the last time that I visited my father's family in Lipnica (near Cacak), and the only thing I could remember was me as a kid running through the orchard.
So, yes... it was a long time ago.

This summer I really felt the need to visit my father's aunt and the rest of the family. Even that it's a 6 hours drive... we packed bag and went for the trip.

These were really hot days. The kids were spending the days just in underwear, running around, playing with dogs, picking apples, grapes and plums from the trees. They were so happy doing it!

My father's aunt has eighty something but her mind is clear as water. I passed my days listening to her stories... things that happened decades before. I didn't need nothing more then that.
Neighbours were stopping by, bringing some fresh fruits and vegetables... and we ate just simple, but delicious, food.

These were days that will stay in our memories.

My country/ies, Croatia

As I mentioned before, August was/is the month for traveling.
We went to visit my family in Bosnia and then, from there, we did a few trips, some longer than the others but all equally beautiful.

First we spent a week at the Croatian coast. We traveled to the island of Brac and stood in a small fishermen's place, called Sumartin.
As a kid, I used to spend the summer holidays in the Adriatic coast and it's my favourite.
Calm, blue, clear water... you could spend all the days in the water (which actually my kids mostly did).

These were such a lazy days..
I loved doing nothing, reading, eating icecream, wandering around.. we enjoyed so much.

Figs grow everywhere and I would go every day to pick them, still hot from the sun, sweet as honey... best possible snack.

When we came back to my parents house, we stood there a few days and, since M. had to go back before us, I wanted to visit Plitvice lakes with him before he leaves.
We decided to go for a day trip (latter I realised it was not the best thing to do). After 3 hours of driving through Bosnia, with almost 40ºC, we arrived on the place that looked like a paradise... untouched nature, clear light blue water, waterfalls... the only thing that I wanted to do was to jump in that water.
I tried to ignore the thousands of other visitors {*smile} and enjoyed this beautiful place.

A few days latter I had to drive M. to the airport and, since his flight was late in the afternoon, we left earlier and had a walk in Zagreb.
The city was completely deserted, something to expect on a summer weekend with 40ºC temperature outside. Anyway, we had a nice walk and lunch in our favourite pizzeria and discovered a lovely place with great cookies and brownies.

My country/ies, Bosnia

I was born in a country called Yugoslavia, and lived there for 19 years.
After that I was told Yugoslavia doesn't exist.
That may be true. Yugoslavia may not exist on the maps and papers, but it still exist in my heart.

I still consider Croatia, Serbia, Bosnia... my countries.
People that live there speak the same language, eat the same food, listen the same music, laugh on same jokes.... so I spent August travelling through MY COUNTRY and it felt so good.

I took so many photos and will share some of them with you today and in the next few posts.

Eu ainda considero a Croácia, Sérvia, Bósnia... meus países.

Eton Mess with Strawberries and Mascarpone Cream

Getting ready for vacations for me includes one thing... fridge cleaning.
On the last days before vacations I try to cook 'fridge rests', and that my friends asks for creativity {*smile}. This time it was not that hard. I had a full jar of egg whites and half a package of mascarpone and also some strawberries that I bought at the organic market on Saturday... perfect combination for Eton Mess (I just love the name of this traditional English dessert... Mess in the name of a dish does call my attention).

So, we are enjoying these last days before our trip with this great dessert...

During August I may stop by to say hello, but mainly I will try to rest, enjoy time with my family and friends.

I wish you have a great August, with a lot of gatherings around the table full of simple meals... together with family, friends and loved ones.

*****

Eton Mess with Strawberries and Mascarpone Cream

For the meringues:
6 large egg whites
340g sugar
1 pinch of salt

For the Strawberry Compote
250g strawberry
2 tbs sugar
1 ts orange blossom water

Preheat the oven to 140ºC. In a very clean bowl, whisk the egg whites until they reach firm peaks. Gradually add the sugar and salt and whisk well until the mixture is thick.
Spoon the mixture into blobs on your baking tray lined with baking paper. Bake for 1h.
While the meringue is baking, make the strawberry compote. In a pan, cook strawberries and sugar on medium heat. Stir and let it cook for 5 minutes. Remove from the heat and add orange blossom water.
Now let's make mess {smile}. Cover the meringue with mascarpone cream and strawberries and mash it in. Enjoy!!!

*****

Para os merengues:
6 claras de ovos grandes
340g de açúcar
1 pitada de sal

Para o Compota de Morango
250g de morango
2 colheres de sopa de açúcar
1 colher de chá de água de flor de laranja

Pré-aqueça o forno a 140ºC.
Agora vamos fazer a confusão {smile}. Desfrute!
