Plum and Apple Crumble

After a month of being away and abandoning this space and my kitchen, I am officially back.
I am back into the kitchen with full speed and I have to say I missed it. In the last days I baked a lot, mainly for work, but I wanted to make something for me and M.

Um mês depois de estar fora e de ter abandonado este espaço e minha cozinha, estou oficialmente de volta.
Regressei à cozinha na velocidade máxima e tenho de dizer que tive saudades. Nos últimos dias cozinhei bastante, principalmente para o trabalho, mas queria fazer alguma coisa para mim e para o M.

Plum and Apple Crumble

While I was in Serbia with my family, spending time in orchard, under the apple and plum trees, I just though how I would love to make some crumble from these pretties.

On Saturday, on the market, I noticed there was a big variety of plums and I just couldn't resist. Their shapes and colours are incredible and the tastes are completely different. I wanted to make crumble using all of these different plums.

We ate it yesterday, with some ice cream, and it tasted so good... felt like if the autumn was near.

Enquanto estive na Sérvia com a minha família, a passar o tempo no pomar debaixo das árvores de maçã e ameixa, só pensava em como gostaria de fazer um crumble a partir daquelas belezas.

No Sábado, no mercado, reparei que havia uma grande variedade de ameixas e não consegui resistir. As suas formas e cores são incríveis e os gostos são completamente diferentes. Queria fazer crumble usando todas aquelas ameixas diferentes.

Comemos ontem, com um bocadinho de gelado, e soube tão bem... foi como se o outono estivesse próximo.

Plum and Apple Crumble

Plum and Apple Crumble

350g plums (all variety you can find)
2 middle size apples
1ts vanilla sugar
1ts cardamom
130g spelt flour **
15g almond flour
50g sugar
80g spelt flakes ***
25g flaked almond
100g soy margarine, cold *

Cut the plums and take the pits out. Peel the apples and cut both plums and apples into chunks.

Add vanilla and cardamom to the fruits.
In the meantime turn on your oven to 180ºC.
Mix, with your fingers, flours, flakes, sugar, almond flakes and margarine until you obtain crumbles. Place on top of the fruits and place into the oven for 25-30min.

*   you can replace the soy margarine with butter
**  you can replace the spelt flour with wheat flour
*** you can replace the spelt flakes with oat flakes

Crumble de Ameixa e Maçã

350g de ameixas (todas as variedades que encontrar)
2 maçãs de tamanho médio
1 colher de chá de açúcar de baunilha
1 colher de chá de cardamomo
130g de farinha de espelta **
15g de farinha de amêndoa
50g de açúcar
80g flocos de espelta ***
25g de amêndoas em flocos
100g de margarina de soja, fria *

Corte as ameixas e retire os caroços. Descasque as maçãs e corte ambas as ameixas e as maçãs em pedaços.

Adicione a baunilha e cardamomo aos frutos.
Entretanto ligue o forno a 180ºC.
Misture, com os dedos, as farinhas, flocos, açúcar, flocos de amêndoa e margarina até obter farelos. Coloque em cima das frutas e leve ao forno durante 25-30min.

*   pode substituir a margarina de soja por manteiga
**  pode substituir a farinha de espelta por farinha de trigo
*** pode substituir os flocos de espelta por flocos de aveia

Edith's Apricot Cake


My German friend Edith is a great cook. First time I tried Plum Crumble Cake she made I loved it so much that I had to take one more slice,and then..one more.
Cake has acid plum flavour combined with crunchy crumble and soft base.Perfect!!!
When I asked her for recipe she told me it is easy to make cake, but since I knew she is great cook I thought that probably it is not as easy as she was saying.

Some weeks after she sent me recipe.

It is definitely one of these recipes that can go to category 'easy but perfect'. Even measurements are matching and easy to remember.If you try it you will love it.

We already tried to make it with plum, apple and apricot and my next try will be berries.

Blueberry Cake with Crumble


My mother used to cook all my favourite food for me when I was sick. It was normal not to have a great appetite when being ill, so she would make all these yummy food I loved, just to encourage me to eat something. I know... complete spoilness, but I loved it and I try to do the same when my kids are not ok.

But... being an adult doesn't implies that we loose all these habits we had as a kid so, in these past days, I had a wish for 'sweet'. I really, really wanted to eat something sweet. And it was not to eat whatever sweet I find in front. I was quite picky, I wanted something sweet but not too sweet, something with fruits and crunchy. So, after I mentioned it few times to M., he decided to make a try and spoil me completely.

We were kind of like Linguini and Remy from Ratatui cartoon. I was telling him what to do, giving tips, and he made it!!!!
Great blueberry cake with crumble. I was completely satisfied, with some vanilla ice cream.. yummy!!!!

A minha mãe costumava fazer-me todas as minhas comidas preferidas quando eu estava doente. Era normal não ter muito apetite quando adoentada, por isso ela fazia todas essas comidas deliciosas que eu adorava, só para me encorajar a comer algo. Eu sei... enchia-me de mimos, mas eu adorava e tento fazer o mesmo quando os meus pequeninos não estão bem.

Mas... pelo facto de sermos adultos não implica que percamos todos estes hábitos que tinhamos quando crianças por isso, nestes últimos dias, eu tinha um desejo por 'doce'. Eu queria mesmo, mesmo comer alguma coisa doce. E não era comer qualquer coisa que encontrasse à frente que fosse doce. Eu estava bastante exigente, queria algo doce mas não demasiado, algo com frutos e crocante. Então, depois de ter referido isso várias vezes ao M., ele decidiu experimentar e mimar-me completamente.

Nós parecíamos o Linguini e o Remy do Ratatui. Eu dizia-lhe o que fazer, dava-lhe dicas, e ele conseguiu!!!!
Fantástico bolo de mirtilos com crumble. Eu fiquei completamente satisfeita, com um bocadinho de gelado de baunilha... yummy!!!!

Peanut Cookies


When I discovered the recipe for peanut cookies in Donna Hay Modern Classic Book I knew I will give it a try.

Why?

Because I have somebody at home who unconditionally loves everything that includes peanuts... my daughter Hana.

At the end it is not just her that liked the cookies, it was everybody at home. Really worth trying and easy to make.

Quando descobri a receita de bolachas de amendoim no Donna Hay Modern Classic Book sabia que iria experimentar.

Porquê?

Porque tenho alguém em casa que adora incondicionalmente tudo o que inclua amendoins… a minha filha Hana.

Mas afinal não é só ela que gosta das bolachas, são todos lá em casa. Vale mesmo a pena experimentar e são muito fáceis de fazer.

Berry and Rhubarb Crumble


While doing my week shopping this weekend i found rhubarb and I just couldn’t resist...as soon as I came home I made some berry and rhubarb crumble with a bit of cardamom.
Rhubarb acid touch with a scent of cardamom...great. I still had some homemade vanilla ice cream ,and It made perfect pair..Actually I am thinking to frozen some rhubarb to have it for winter, something I never tried to do. Do you have experience with it? Some suggestions?

Enquanto fazia neste fim-de-semana as minhas compras encontrei ruibarbo e simplesmente não resisti… assim que cheguei a casa fiz crumble de frutos silvestres e ruibarbo com um bocadinho de cardamom.
O toque ácido do ruibarbo com o aroma do cardamom… fantástico. Ainda tinha algum gelado de baunilha caseiro, e fizeram um par perfeito… Na realidade estou a pensar congelar algum ruibarbo para ter no inverno, algo que nunca tentei fazer. Têm alguma experiência? Alguma sugestão?

Apple and Cinnamon Muffins with Crumble

Adoro picnics no Verão… comer fora, ar, Sol, rio… é fantástico.
Não vão acreditar.. mas todas as noites os meus filhos me perguntam se vamos comer fora e fazer picnic. Acho que eles também são grandes adeptos.

Costumo fazer chá gelado com limão e canela, wraps com vegetais e queijo, frutas frescas e muffins com frutas… como estes.

Qual foi a última vez que fez um picnic? Eu tive o meu ontem :-)

I love picnics in the summer..eating outdoor, air, sun, river...it is just great.
You won’t believe..but every evening my kids ask me on dinner time if we are going out to have picnic. I guess they are big fans also.

I use to make Ice Tea with lemon and cinnamon, wraps with vegetables and cheese ,fresh fruits and muffins with fruits...like these once.

When did you go for a picnic last time? I had mine yesterday :-)

Apple and Berry Muffins with Crumble


School finished and my daughter started to go to one ATL, met new friend, make new friendships..have a lot of fun doing different things..So .. .since her new friend didn’t know details about her she made sure they know. The other day Hana came home saying she told to all the friend in ATL that her mother is making organic cakes (I have perfect PR) and now she has to show them how good her mother cakes are :-).So ...I made these fruity muffins with crumble and send. Regarding Hana everybody loved it :-)

A escola terminou e a minha filha começou a ir a um ATL, conheceu novos amigos, fez novas amizades.. diverte-se muito a fazer coisas diferentes… Então… como os novos amigos não sabiam detalhes sobre ela, fez questão que ficassem a saber. No outro dia a Hana veio para casa a dizer que contou a todos os seus amigos no ATL que a mãe faz bolos biológicos (tenho a RP perfeita) e agora tem que lhes mostrar como os bolos da mãe são bons :-). Portanto… fiz estes muffins de frutas com crumble e enviei. Pelo que a Hana disse todos adoraram :-)

Crunchy Blackberry, Rhubarb and Mint Tart


Yesterday I had lunch with someone I met lately, through my blog, someone who is passionate about medical and aromatic herbs. I loved speaking with her, exchanging some ideas and I came back home ready to make something. So ,since I had small mini garden at my terrace I took a lot of mint and made this Crunchy Blackberry, Rhubarb and mint tart.


Ontem almocei com alguém que conheci há pouco tempo, através do meu blog, uma pessoa que é apaixonada por ervas aromáticas e terapêuticas. Adorei falar com ela, trocar algumas ideias e voltei para casa pronta para fazer alguma coisa. Então, como tenho um pequeno mini-garden no meu terraço, tirei bastante menta e fiz esta Tarte Crocante de Mirtilo, Ruibarbo e Menta.

Berry Crumble and Friends


Before I started my blog and especially during these last 3 months, since I started all of this, I got a lot of support from my friends. Critics, opinions, congratulations, ideas..first orders came from a friends...
This gave me strength to, after 8 hours of work as IT engineer, after long day as mother of 2 kids, I enter kitchen in the evening, turn on my radio and start making cakes...
This weekend was really special, a lot of friends around, great feedbacks, BIG support and I am really happy!!!

Antes de começar o meu blog, e especialmente durante estes últimos 3 meses, desde que comecei tudo isto, recebi muita ajuda das minhas amigas e dos meus amigos. Críticas, opiniões, parabéns, ideias… as primeiras encomendas foram deles.
Isso deu-me força para, depois de 8 horas de trabalho como Engenheira de SI, depois de um longo dia como mãe de 2 crianças, entrar na cozinha à noite, ligar o rádio e começar a fazer bolos…
Esta semana foi muito especial: estive rodeada de amigas/os, com excelentes comentários, GRANDE ajuda e estou muito feliz!!!

Plum Raspberry Cardamom Crumbles

Yesterday was first day of spring…and even without that I could say that spring is coming, definitely.
There is more light, more sun, everything is growing, smell of flowers everywhere…I love it.
Since it yesterday was Saturday, I passed by Principe Real market off course and spring was also there:-). Full of all kinds of fruits and flowers, so as soon as I came home I had to make this lovely crumble, full of fruits and their juices. Great spring desert!!!

Ontem foi o primeiro dia da Primavera… e mesmo que não fosse podia dizer que a Primavera estava a chegar, de certeza.
Há mais luz, mais sol, está tudo a crescer, o aroma das flores por todo o lado… adoro.
Como ontem foi Sábado, passei claro no mercado do Príncipe Real e a Primavera esta lá também :-). Estava cheio de todos os tipos de frutos e flores, por isso assim que cheguei a casa tive que fazer este maravilhoso crumble, cheio de frutos e os seus sucos. Fantástica sobremesa primaveril!!!

Blueberry muffins with crumble



Some weeks ago we went to Jardin de Estrela for crafts and design fair and knowing that there is no possibility to buy something to eat and drink there I made blueberry muffins and some coffee and brought with us. I met a fried there and while kids were playing we were sitting on the bench, drinking coffee, eating muffins and chatting .
So when I announce that I would like to start taking orders for cakes and other goodies the same friend call me and said immediately :’I want that muffins we ate in Jardin the Estrela’. So...I got my first order...
