Raspberry Rolls

There is something strange going on with my kids in the last weeks. They go out of school completely starving and the first thing they ask me when they see me in front of school is 'Mama, what did you bring for us to eat?'. Well... there are a few possible explanations for this... or they don't eat in school (even that they have meals there and I pack their snack every day), or they loose all the energy in school and they need to eat again, or they are growing and they need good nutrition.

I still don't know and that is something to investigate but, in the meantime, I have to feed them, right?

So I am trying to make some things to bring for them to eat between after school and dinner. It has to be some small snack that can satisfy them until dinner time.

I made these rolls yesterday and they loved it. Next time I may put some fresh fruit and decrease the quantity of jam, but I found it easy to make and great for the purpose.

Fiz estes rolos ontem e eles adoraram.

Raspberry Baskets

Our Christmas dessert was tiramisu trifle, coffee panna cotta with ladyfinger biscuit and chocolate... gorgeous, but it disappeared with speed of light and I didn’t have absolutely any chance to take photos.
Since on the 25th we were already without any dessert at home, I decided to make this raspberry baskets and I didn’t allow anybody to get near them before I took some photos. The base is made from normal sweet pastry but the filling was really fresh, made with mascarpone cheese and, on top, I put some fresh raspberries. I bought them with the idea of sangria with red fruits on my mind… in the end they finished in dessert.
Really fresh and light dessert, perfect for the day after Christmas food coma.

Raspberry cupcakes

Besides the fact that today is a perfect spring sunny day in Lisbon, there is something else special in it. It is a baptizing day of a friend’s baby girl.

I wanted to make something really pinky for this pretty baby girl so, I decided to make raspberry cupcakes with pink lace on it. I think they are really pinky and girly… do you agree? :-)

Plum Raspberry Cardamom Crumbles

Yesterday was first day of spring…and even without that I could say that spring is coming, definitely.
There is more light, more sun, everything is growing, smell of flowers everywhere…I love it.
Since it yesterday was Saturday, I passed by Principe Real market off course and spring was also there:-). Full of all kinds of fruits and flowers, so as soon as I came home I had to make this lovely crumble, full of fruits and their juices. Great spring desert!!!

Raspberry Tea Cakes

You know these days when nothing goes good...I had one of them.
Last night I decided to make some Raspberry Tea Cakes for collecting money for centre MIMAR.
First I drop full bowl of raspberry glaze, it was all over the kitchen.
Then when I succeeded to finish them I just needed some of icing sugar, opened my kitchen storage and realised I don’t have any of it....and it was 7:30 in the morning...finally my neighbour saved a cause and I finished them.
Went to the car..no car keys...but...at the end cakes came to their destination and I hope we will collect a lot of money and give our contribution for this centre.
