Baked eggs

Baked Eggs

You would be surprised if I say I spent more then 5 minutes trying to decide how to name this post.
It is post about a dish my mum use to make for me.

My mum worked all her life as a teacher, first as a village teacher , at a time when teachers were really respected and kids would get up early in the morning and walk for few km , on the rain snow or sun to come to the school.
A lot of generation passed through 'her hands' and I find it amazing how these kids, now adults with there own families, stop her on the street sometimes and say: 'Do you remember me.. I was in your class in the third row', and she does remember.
Even she educated so many kids, she always had time for us. She was and still is tough mum, with a lot of authority, but she dedicated all her life to us...me and my sister.

There is something I inherited from her...we both show our love through food. I so much enjoy to make favourite food for my family and friends. And she does that always. So..this dish is one of the dishes my mum made to me, I love it so much.

Now I changed it a bit, add some ingredients I didn't like as a kid and I hope you will like it also.

Baked Eggs

Baked Eggs

1/2 pepper, chopped
handful cherry tomatoes, halved
1/2 small onion
2 cloves garlic
1tbs olive oil
100g ground beef
2tbs tomato pulp
chopped parsley leaves
2 eggs
pecorino, finely grated
1tbs olive oil salt pepper

Place olive oil in a pan and add garlic and onion. Cook for 1 min and add green pepper and tomato. After 2 minutes add tomato pulp and parsley. Add salt and pepper and 2 tbs water.
Cook for few minutes,add water if needed.

In a meantime heat the oven to 180C, grill. When meat and vegetables are cooked place them in individual oven dishes, and place egg on top of each. Sprinkle with grated pecorino and put in the oven. Bake for 15 minutes or until eggs are cooked.

Sprinkle with some more grated pecorino and serve.

Courgette and Pepper Tart

Hello!!! How was your weekend?
I had a really nice one. On Saturday we participated on the fair and it was great. I love to do it since I can see the customer's reaction immediately. We sold everything until noon (and fair was until 14h)... amazing!!!

Yesterday I finished some orders, went to the gym and then to cinema..

But let's speak about my today's lunch {*smile}.
This is one of my favourite Popina recipes. The original one is Courgette and Fennel Tart (I tried that version also and loved it) but, since I had some nice peeper at home, I did a small change. You can add the vegetables you like and also some herbs (I added some thyme leaves).

This is something between pizza and tart. It has pizza dough, not shortcrust (so no butter in), and the filling is also different. Instead of cream and egg filling, it has yogurt and some Cheddar cheese. So, in my opinion, this dish has the best from both pizza and tart, and it is much lighter (not too caloric).

I absolutely love it.

O meu foi muito bom. No sábado participamos na feira e foi óptimo. Eu adoro porque posso ver logo a reacção do cliente. Vendemos tudo até o meio-dia (e a feira era até às 14h)... incrível!

Ontem terminei algumas encomendas, fui ao ginásio e depois ao cinema..

Mas vamos falar sobre o meu almoço de hoje {*smile}.
Esta é uma das minhas receitas favoritas da Popina. A original é Tarte de Courgette e Funcho (eu tentei essa versão também e adorei), mas, como tinha alguns pimentos bons em casa, fiz uma pequena alteração. Pode-se adicionar os legumes que quiser e também algumas ervas (eu adicionei algumas folhas de tomilho).

Isto é qualquer coisa entre pizza e tarte. Tem massa de pizza, não é massa quebrada (portanto sem manteiga), e o recheio também é diferente. Em vez de creme de leite e recheio de ovo, tem iogurte e queijo Cheddar. Então, na minha opinião, este prato tem o melhor de ambos pizza e tarte, e é muito mais leve (não muito calórico).

Eu adoro completamente.

Aubergine, Pepper and Tomato Tart


Didn't I say that I really want to do some picnic?

This recipe from Isidora Popovic Book of Baking is the true summer thing. Vegetables and Greek yogurt make really light and fresh filling and, as soon as I made it, I wanted to go out to some park and eat it with a glass of vine and enjoy the summer breeze.
The initial idea was to make M. a surprise and have the picnic with him in the park near his work, but at the end he couldn't.
But I didn't quit... I brought my vegetables tart, wine, peach galette and the blanket to the park next to my house end enjoyed it all while reading a book.

Esta receita do livro Book of Baking da Isidora Popovic é uma coisa verdadeiramente de verão. Legumes e iogurte grego fazem um recheio realmente leve e fresco e, assim que a fiz, queria ir para um parque comê-la com um copo de vinho e desfrutar da brisa de verão.
A ideia inicial era surpreender o M. e fazer o picnic com ele no parque perto do seu trabalho, mas afinal ele não podia.
Mas eu não desisti... trouxe a minha tarte de legumes, vinho, galette de pêssego e o cobertor para o parque perto de casa e apreciei-a enquanto li-a um livro.
